Long before borders were drawn and nations were named, there existed an ancient artery that connected the East and the West — the Silk Road. Along these vast and perilous routes, not only silk and spices traveled, but the soul of culinary artistry itself. Among these treasures was the art of preserving seafood, a practice that would one day find its most refined expression in the heart of Japan.
From the Silk Road to the shores of Kyushu, the knowledge of curing cod roe — the ancestor of modern mentaiko (spicy cod roe) — merged with Japan’s reverence for nature and craftsmanship. Over centuries, the simple act of preservation was elevated into a culinary tradition steeped in discipline, patience, and devotion.

At PINTAIKO, we do not simply make mentaiko.
We embody the spirit of a civilization that once stretched from the deserts of Persia to the imperial courts of Japan.
Every grain of our cod roe is meticulously chosen — a rarity of one in 100,000 — and bathed in the mineral-rich hot springs of Kyushu, a land shaped by the ancient fire of volcanoes. This pure cleansing unlocks the roe’s natural resilience and delicate texture.
Our journey continues through a patient aging process of over 180 days. During this time, the roe matures into a symphony of flavor, guided by the bold spark of Sichuan peppercorns and the fragrant whispers of Aleppo peppers from ancient Turkey. Infused with the natural sweetness of Aomori's royal apples and the rare snow-harvested carrots of the north, each bite of PINTAIKO tells a story that spans continents and centuries.
